How about from a former NJ member? Been gone about 4 years now.
Your "Central" location is kinda vague. I used to live in Hunterdon Cty., and found the best place for militaria was the "Forks of the Delaware Historical Arms Collectors" shows at the Allentown (PA) Fairgrounds. All firearms & militaria, no jerky & jewelery, and generally full of vendors and shoppers. I seem to recall that they hold them every 3 months or so.

Doesn't show 2010 schedule, but their ad in Arms Collector says: May 8/9, July 10/11, Oct 16/17 and Dec 4/5 for 2010.

I've been gone since 1980 but Englishtown Auction or Collinsworth Auctions were the palce to be.
Sarco is located in Stirling, NJ and has a retail operation in addition to its large mailorder parts business.
If you make the trip before you go home swing by Griffin and Howe in Bernardsville. Its only about 6 miles away and is definitely worht the trip. You won't find milspurps of course (although on one recent visit I encountered a real M1903 Sporter!).
Despite the fact that the State of NJ goes out of its way to make owning guns a royal PITA there is a large and active shooting community in NJ as well some highly rated commercial ventures such as G&H's Hudson Farm.
