Sir, what'll the gun be used for? Casual shooting, field use, and match shooting all have different requirements that will, to a certain extent, affect your choices.
FWIW, I had Krieger (Home) rebarrel a clapped-out Greek rack grade with a heavy .308 1:11 barrel for match use. Nice work resulting in a very accurate gun, but expensive. I don't think they do any refinishing.

You may want to talk to our own MGST Gus Fisher.
Try Springfield Armory. They have a very resonable rebarrel/repark package, call their customer service line.
They can do new barrels from mil spec to match grade depending on your budget. Two years ago, I had two 308's done and they both run great.

The rifle will be used mostly for casual shooting. I have the odd receiver and parts but no barrel and thought I need something different.

Gus Fisher would be my first choice as well, since he is so close and is a fantastic Gunsmith and Marine National Match Armorer. The only problem is that the only way to get to Gus is through local gunshows in Virginia or at the National Matches at Camp Perry. I believe he works this way because of past experiences he's had with the major shipping companys and their poor handling of these fine rifles.
The above will do excellent work I'm sure. I used Roland Beaver in Bald Knob(I love that name), Ark. 501-724-6388 to install his .308 Wilson barrel and accurize M1 several years ago. He is a former Marine Corp Match Armorer and his company goes under "Old Corps Weaponry".He did an excellent job and I was extremely pleased with the transaction. It was a real tack driver.

They installed my 1/2" short SA Italian barrel on my BMR M1 Garand reciever and reparked the entire rifle. They did a great job, and it was only $75 for the repark. The entire rifle is all BMR / BMB parts less the barrel. Everything I sent them came back and the finish was second to none.

I do not go to those shows much anymore I went to the Dec. Belleville show I think it was a madhouse. Here are some pics taken today of my .308 SA Inc. rework with a CMP stock that I finished.

Very nice rifle. Did SA refinish the gas cylinder as well? You are right about the madhouse. There is a show next weekend but I have other plans.

I second Dean's Gun Restoration ( DGR.com ). He has done several M1's for me in .308 conversion. The workmanship is excellent. If you plan on shooting both .308 and 7.62x51 make sure you let who ever does the work know this so they can chamber the barrel accordingly.
Hey Chief: Had Tony Pucci at Orion7 do up a 7.62 from a Greek field grade. Greeks had refinished it so it looks great. Tony put on a barrel and I got a stock from CMP. Buddies on the Marine Corps League advised me after they shot it to put my AR back i9n the safe for matches. This rifle is a tack driver. he put on a Kreiger barrel and did all of the work right in front of me( I live close by). Orion7 on the web.
Chief , depending where you live , you might want to give Orion 7 a try. They do great work and stand behind their products. I have two .308 Nato conversions by them and they both shoot great.
