Book Recommendations for 1911/1911A1
I'm interested in learning more about the 1911 & 1911A1. If you were to recommend one or two books, what would they be?

Your best bet are books by Mr. Charles Clawson. There are some around but be prepared to pay a handsome price.

Are you talking "historical" or hard-core "technical"?
If the latter, the BEST books I have seen are the pair by Jerry Kuhnhausen:
"The Colt .45 Automatic; a Shop Manual", 10th Edition.
A bit of history, then into minute details of variations, parts identification, fault-finding, "customizing", etc. Lavishly illustrated with photos, line-drawings, tech drawing, lists of tools and gauges (and how to use them correctly).
Published by Heritage VSP and usually available through Brownells.
