Tastes like chicken Jim! Put in a pie or casserole with some pheasant, a few chunks of that other rat species, muntjuc deer and rabbit........ lovely! My local butcher bags up enough, mixed for 5 or so big casseroles

I would describe pigeon as tasting and looking more like liver. The several which I've had were all road kill. Occasionally I also pick up a road kill pheasant if they can be retrieved safely such as off a quiet road.
