I'm going to be refurbishing a 1940 Erma built K98 that had its stock butchered.... I mean "sporterized"... Would the correct type of stock be the flat butt or cupped for this variant?

I believe flat would be correct.
That's what I'm leaning towards as well. I'll do some more research before I convince myself though. ;)

A flat butt plate is correct for Erma for 1940, it was changed to a cupped butt plate in 1941.

My thoughts are that it can never be 100% accurate but it is a good starting point.
He lists both the 1940 Erma "#27" code and the later "ax" code. Stock should be laminated only, polished and stained. Both codes show flat buttplate fitted and the long 12 1/2" cleaning rod.
i wouldn't rely heavily on Backbone of the Wehrmacht. it has some good info but is also riddled with mistakes.
