Looking for 1891 stock bolt nut

I've looked in all of the usual sources, but cannot find a listing, much less one in stock.

Could you get a normal nut at a hardware store that would fit?

Have you tried Springfield Sporters? They have a good assortment of Carcano parts at fair prices, try:

    Springfield Sporters, Inc.

If you are unsure what the correct name of the part is, give them a call, they'll tell you what they can do for you.
