You could say that Clarkie they are a fresh water crustacean that can grow up to 300mm+ long usually called a moss back due to their age they are in between a cray fish and blue swimmer crab for texture and taste the tails are nice when still warm on fresh buttered bread with a bit of pepper infused malt vinegar. But the sweetest meat is held in their nippers they are awesome I suppose they are like the USA's crawfish but bigger.
Catching them is highly restricted and kept to 1 month per year and very small bag limits if you get caught by fisheries out of season you can lose all your gear including your vehicle you can use nets but some place are snare only as that requires a good deal of skill sorta like how you catch crayfish with a snare Australiaprobably exports them see if you can source a couple to eat they may be a tad expensive the 4.2 Kilos we brought was $180/Au and that's from a local seller not 4 minutes from my front door.
