Yes the 30 carbine does head space on the mouth of the case. That is why case length is so important if you reload as the case does stretch quite a bit when resized.

FWIW, stripping the bolt is not necessary if the gauge has a cutout for the ejector. Just remove the operating spring and slide and slip the gauge under the extractor lining up the hole with the ejector. Then headspace as normal, with light finger pressure only.
Headspace problems are uncommon with the carbine, since the cartridge setback is fairly light and most guns were not fired a lot (the M2 being an exception). Other problems, like muzzle wear and throat erosion are also rare, since cleaning was not as vigorous (non-corrosive primers) and the smaller powder charge and the type of powder used meant less erosion.

When one swaps a known working bolt for that special one that has that special mark on it, keep in mind that the bolt you bought with that special mark was sold for a reason.
Maybe it had that very special mfg mark on it, or maybe it was no longer serviceable? Something cool to look at. Before swapping bolts I would be very careful and made sure I understood what headspace is and had in hand, at least two of them. No go and field.
Bear in mind that the early bolts were replaced for a reason. The right, forward boss was very weak in design. Couple that with a max spec reload, untrimmed case, and a worn out recoil spring and you are inviting hot metal parts from a 66 year old firearm to implant that specially marked bolt into your forehead.
